It is really easy to make and it's a versatile cheese: you can grate it on pasta or you can use it in cakes in its sweet version..
  • What do I need to start making cheese ?.
  • As mentioned before, the essential is milk and lemon juice, but in this class I am using:-Whole Cow's Milk, 2 Litres.
  • The less processed that you can find, even better if it's raw milk from Goat or Sheep, keep in mind that raw milk can carry risks for your health. .
  • - Rennet.
  • You can easily find it online or even in some grocery stores..
  • - Kitchen thermometer .
  • A common kitchen thermometer..
  • - Cheese moulds and a Cheesecloth.
  • Like the rennet you can buy them online or in some stores..
  • If you don't have:.
  • - Rennet you can use lemon juice, 20 ml per litre of milk, but in this case I suggest to eat it fresh within 2 days..
  • - Kitchen thermometer you can put your finger in the milk when it should be at 38° (which is more or less the human body's temperature), if it feels warm then it is right, while in the second stage when milk is at 80° you can bring it to boil then turn the heat off and wait a few minutes..
  • - Cheese Moulds and Cheesecloth you can use a cloth with a texture suitable for filter liquids, make sure it is clean and sterile, you can boil it to make sure of that. .
  • Where do I store the cheese?.
  • You can store it in the fridge from day one, but I suggest to store it in a room with a temperature of 15° of below for the first week, then you can move in the fridge..
